Hinigaran's Best Oyster

In a small town called Hinigaran, 52 km south of the City of Bacolod in the Island of Negros, people love to eat oyster or we call it in the local Hiligaynon language as talaba.

But many Negrenses didn't know that oysters in the Philippines were first introduced by the Americans in Hinigaran.

According to fao.org:

Oyster farming began as early as 1931 when an oyster farm was established in Hinigiran, Negros Occidental employing the broadcast method of culture. The practice has now spread to many parts of the country including Mindanao. Mussel farming began in 1955 when the BFAR oyster farming station in Binakayan, Cavite set up a demonstration mussel farm (Yap, 1999).

It is best eaten with a hot rice paired with a glass of cold soda. If ever you drive thru Hinigaran there are many local eateries near the twin bridge where you can eat oyster, one of Hinigaran's best.
